Pork leg, fried cabbage, grilled potato with garlic sauce

Ingredients:

  • 1 pork leg
  • 1 young carrot
  • 30 dag smoked bacon
  • onion
  • garlic
  • 2 tablespoons plain wheat flour seasoning (salt, pepper, sugar, vinegar)
  • 6 young potatoes
  • butter
  • garlic sauce (mixture of cream, mayonnaise, garlic, chopped dill and seasoning)
  • allspice
  • bay leaves
  • wine or beer

 

Directions:

Pork leg:

Rub pork leg with salt until white and leave for 2 days. Prepare marinate with seasoning, pour over pork leg and leave for 7 days in cool place. Remove, tap dry and roast in stove lit with fruit tree wood. Baste with beer or red wine from time to time. Cut up portions while hot and serve with fried cabbage.

Fried cabbage:

Shred and cook cabbage, drain and combine with fried bacon, onion and flour. Season to taste and add garlic at the end.

Potatoes:

Cook jacked potatoes, washing them firs well. Make a cutting in each potato and place spoonful of butter and clove of garlic inside. Wrap each potato in tin foil and bake in grill embers or an oven. Serve with garlic sauce.
